Sparkling Berry Lemon Cocktail

Here is a tasty Berry Lemon Cocktail for your to try this summer!

I seriously can’t believe that next week is the last week of school for the kids! It makes me happy and sad at the same time. I’m happy because I love spending more time with them in the summer, but sad because we’ve had a great school year with wonderful teachers and, well, I don’t always like change – and I’m definitely not ready for them to move up grade levels.

I’ve felt a bit of a disconnect lately. I’ve been so busy with the kids and day-to-day stuff that I haven’t really stepped back and taken everything in. The past few months have been flying by and I don’t like it one bit. I know that I need to take a little time and sit back to really enjoy the moments, without worrying what is happening next or what I’m supposed to do.

I read some quote the other day that said something like, “The best feeling is the feeling when know you are right here, doing exactly what you want to do, and being exactly where you want to be.”

I probably chopped that quote up, but you get the idea. Instead of always thinking about what I should be doing or where I should be, I’m going to try to remember that where ever I am this summer, this month, this year, is just exactly where I need to be.

Last week I took an evening and did just that. I shut off the computer, got the kids to bed, cracked open a magazine and was inspired to make a summer-y berry lemon cocktail.

Double Berry Lemon Cocktail

(Inspired by the Blackberry-Lemon-Fizzies in Redbook’s June 2016 issue)

What you need:

1/2 pint of raspberries

1/2 pint of blackberries

3 lemons

1/3 cup of sugar

1 1/2 cups of vodka

Rosemary Sprigs

Club soda

Fill a large pitcher with the raspberries, blackberries, and one lemon sliced up. Use a wooden spoon and gently smash the berries and lemons. Using a juicer, squeeze the other two lemons and add the juice to the pitcher.

Add the sugar and vodka; stir. Pour the mixture into glasses and top it off with club soda and a sprig of rosemary.

Wayne and I enjoyed the cocktails and relaxed at home for a couple of quiet hours.
