You guys – today is the day – the county fair has started! I will be in and out of that place until Saturday night, and Anika is there practically all day long with her lamb. She gets there between 6:30-7am to feed it and clean it’s pen, and then she shows it at a different time each day, and then feeds it again at 7pm. Saturday will be the big auction day where I will be holding my breath and crossing my fingers for her, hoping that she can sell it for a good price and make some profit from all of her hard work!
Yesterday Noah and I did something a little bit different. It was a gorgeous day outside and I had recently bought half of the flat of strawberries, knowing that I was going to make strawberry shortcake soon.
Noah had been wanting me to play with him for quite a while, but I’ve been so busy lately that I, unfortunately, hadn’t taken a couple of hours out of my day to just play pretend with him – and I felt bad.

I don’t know about you, but the kids come home every day and are starving – and usually run over to the cupboard and eat a bunch of junk, instead of something that will be better for them until dinner time. We almost always have RITZ® Crackers in our house, The Whole Wheat are my favorite ones to buy. We also always keep things like peanut butter, apples, raisins, and honey in our house too, so I thought I’d dice up a few apples, spread some peanut butter on those RITZ® Crackers and then top ‘em off with the raisins and apples to see if the kids would eat them (and like them!)
They were a BIG hit! On some of them I sliced the apples instead of dicing them and poured a tiny bit of honey over the top – I couldn’t make them fast enough!
Peanut Butter and Apple RITZ® Bites
What you need:
- ¼ cup peanut butter (creamy or chunky)
- 12 RITZ® Whole Wheat Crackers
- 1 Apple (I used Red Delicious and Golden Delicious)
- ¼ cup of raisins and/or dried cranberries
- Honey, if desired
Place all of the RITZ® Crackers on a serving dish. Carefully spread peanut butter on top of each cracker, set aside.
Dice the apple and then top the RITZ® Cracker with apples and raisins. You can also drizzle honey on top if desired.
When the weather is nice my kids will almost always be playing in the front yard after school, playing pretend and make believe. They all have fun character names that they have, so when I hear Anika calling for “J.J.” (Noah) or “Cherry” (Emma) I know they are in their own little world – so I’ll just sneak another plate full of crackers over and let them continue playing. (Isn’t it great when they all get along for an hour?)

I still can’t believe that we are already well into spring – it seems like just yesterday it was Valentine’s Day! There are quite a few events happening for us over the next month like Noah’s birthday, his preschool graduation, Mother’s Day, Cinco de Mayo, and of course Memorial Day – lots of excuses to celebrate!
Noah and Emma will be starting T-ball soon, Anika’s soccer is well underway and the two sports will overlap until the end of May, so I’m hunkering down for 6 weeks of crazy fun. I’ve been collecting some quick and easy recipes and stocking up on snacks and beverages to have on hand for when parties happen or last minute friends arrive.
Planning ahead and picking up a few extra things while shopping really helps me eliminate any last minute anxiety that I may have for parties or entertaining. I always like to have extra food and drinks around, in case the party is bigger than anticipated, or just to have available if a friend randomly stops by for a visit.
One of the recipes I’ve found and filed away for future reference is RO*TEL’s Rockin’ Guac – it’s really easy to make homemade guacamole that tastes good and seriously only takes a couple of minutes to create. You use one can of RO*TEL’s Original Diced Tomatoes & Green Chilies in the recipe which gives the guacamole a little zesty flavor.
All you need:
3 pitted and peeled avocados
1 can of zesty RO*TEL Original Diced Tomatoes & Green
½ cup chopped onion
A squeeze of lime juice
All you do:
Mash the avocados in a bowl, stir in remaining ingredients, then season with salt and pepper.
The recipe can also be found on the RO*TEL website, which has a how-to video and other great tips. I also like to buy a variety of chips, crackers, and other things like carrots and celery to have on hand because they can quickly create a tasty appetizer/snack tray.
I have plenty of juice boxes and water at my house, but I like to buy a few special adult beverages drinks to have available for guests (or myself!) and I’ve recently discovered Bud Light Lime-A-Ritas – if you like margaritas these are a great option to serve quickly with the same great margarita flavor – and it happens to pair well with the RO*TEL’s Rockin’ Guac!
So I have chips and crackers, adult beverages, and lastly, I know that this sounds ridiculous – but always make sure you have ice! I know many of you have an automatic ice dispenser in your freezer, but for those of us who are behind on the times – always make sure you have plenty of ice on hand to quickly cool down a drink or to keep food at appropriate temperatures. We make our own ice cubes the old fashioned way, but I like to keep a bag of ice in our second freezer because it’s come in handy more times than I ever would have thought.

Hi everyone! How was your weekend? The majority of mine was spent working, but I did manage to have a fun little meal with the family as well in celebration of the NCAA® March Madness! We love watching Basketball so I thought it would be fun to have a little evening full of snacks for everyone.
I ran by the store on my way home from work and grabbed some things for us to eat. I stocked up on Coca-Cola NCAA® Final Four Pack available at Walmart as well – you can get 4 4-packs (16 cans) for $5 or 2 packs for $3 (available in select areas) – they had Coke Zero, Vanilla Coke and Cherry Coke cans and I like to always have some on hand for impromptu parties or celebrations. I also purchased ingredients so I could make chocolate cherry cupcakes, beef sliders, and snacks like chocolate cherry cookies, popcorn, oranges, and of course vanilla ice cream so we could have floats too!
I’m back! How has your week been going? Mine has been a little on the hectic side, and I keep telling myself to just take one day at a time! I’ve been trying my hardest to make little choices every day that will be better for me and help keep me going – like eating salads, going to the gym twice a week, things that I can do that will help keep my body going – besides the instant gratification of coffee that is!
Of course I still need some delicious things to eat as well, and I found these DOVE® Fruit chocolates at Walmart and bought some – they are made with dark chocolate and real fruit – there are some with whole cranberries, blueberries, and cherries! Depending on what store you are in, they can be found either in the candy aisle, a display pallet, or I even saw some smaller sized bags while in the checkout.
Hey everyone! I’m actually getting pretty excited for the Big Game coming up next weekend! Why? Because even though I don’t follow football too closely, the team I root for will be playing…and I’m not working – which means it’ll be the perfect excuse for a family lounge day!

I know we are still quite a ways away from the warm weather, but with all of
the extra hours I’ve been working at my ‘real’ job the past couple of months, I’ve
been thinking that I really should be making more smoothies now too! (I’m
talking about the kind with the protein powder and vitamins, not the rum!) J I’m not a huge
breakfast person and on busy or early mornings it would come in handy to just
have a big smoothie to drink for extra energy.

for some smoothie ideas and I’m thinking about taking a couple different smoothie
recipes and measuring out all of the ingredients and putting them in a zip lock
bag so all I have to do is add the ice and liquid portion of the smoothie to

work better with some recipes versus others, but it sounds like a good idea

Hey everyone! This week has definitely been all about celebrations around here! In addition to Emma’s birthday party yesterday, there has happened to have been a couple big games that were played this weekend too – leading up to the really Big Game in a couple of weeks!
Today I wanted to share some cheese themed big game snack ideas with you! My Dad and his wife came up for Emma’s birthday party this weekend (they live in Canyonville – 3 hours away) so I decided to not only have the birthday party, but to also have a little themed meal while we all watched the game together!
I was shopping at Walmart for snacks last week and I saw some new Cheez-It products and instantly thought of what I would be creating: cheese themed snacks for everyone, because, well, we are kind of cheese addicts. Cheez-It has these new Cheez-It Grooves which are pretty tasty (and found in the snack food aisle) as well as Cheez-It Crunch’d, which are a completely new product that I found in a middle aisle display case. Crunch’d is Cheez-It’s first-ever crunchy puff made with 100% real cheese, and they are delicious!
