Easy Meal Idea: Cowboy Caviar Chicken Flatbread

I can’t help but notice all of the back to school displays out already. I was recently shopping at my local Walmart and realized that some kids only have a few more weeks before they head back. Luckily for us we are still on summer break until the Monday after Labor Day

Every week that goes by reminds me that fall will soon be here, and that we will have less free evenings to enjoy leisurely meals on the back deck. Each summer that passes I find myself flipping through magazines and old cook books for meal inspiration for the rest of the year. I also begin stocking up on pantry essentials – things like canned foods that will last for a while.

I recently stumbled on a tasty little meal that was a big hit around here; I called it Cowboy Caviar Chicken Flatbread. While it was great to eat on a summer evening, it would also be a great weeknight dinner during school nights. You could also pair it with a fruit, veggie, or pasta salad and a tasty drink like V8 Splash®, which has tasty fruit flavors that my whole family loves, and it’s made with fruits and vegetables.

Making Cowboy Caviar Chicken Flatbread:

To make the Cowboy Caviar Chicken Flatbread you only need a few simple ingredients, like Pace® – it has a great southwestern flavor and comes in a variety of textures and heat levels to choose from; black beans, corn, chicken, and flatbread. I also used Swanson® Premium Chicken; it is convenient and quick because it’s pre-cooked!

 

Cowboy Caviar Chicken Flatbread

Instructions

2 pieces of flatbread
14 ounces of Pace®
1 ear of corn
15 ounces (one can) of black beans
6 ounces of Swanson® Premium Chicken

Cook the corn, then cut off of the cob. Mix the corn, black beans, and 12 ounces of the Pace® together in a medium bowl.

Place Flatbread onto a grill or under a broiler for 2 minutes, or until lightly toasted.

Open up the Swanson® Premium Chicken and pour into a microwavable container and heat until thoroughly warmed.

Remove the flatbread from heat and spoon remaining 2 ounces of Pace® on top, and then add the cowboy caviar mixture onto each flatbread.

Top with chicken and enjoy!
