Irish Inspired Potato Pie


Hey everyone! This month has been full of so many things going on personally in my life that I really didn’t even stop to think that we are in the month of March already…untill now…now that we are halfway through it!

We’ve had some really sad things happen as my sister unexpectedly lost her significant other whom she relied on. To put a long sad story short, she and my Father have been camping out in my living room for the past two weeks. It seems the older I get, the more I realize that the only thing constant in life is change. Imagine that.

With the added family in the house I’ve been getting a little (more) creative with dinners – incorporating leftovers and different ingredients that are available to me. I try to always keep staples in the house like potatoes, cheese, etc… and bacon – but that doesn’t seem to stay in the house for very long. 🙂

With St. Patrick’s Day coming up in a couple of days I though I would make a meal in celebration of the Irish inspired holiday. I began skimming through Pinterest for ideas and settled on making an Irish Potato Pie. I found the idea from this post, but tweaked it to reflect what ingredients I had around my house. It came out delicious.

Irish Inspired Potato Pie

What you need:

  • 1 pie crust
  • 5 red potatoes
  • 3/3 heavy cream
  • 1 cup of diced corned beef
  • 1/2 onion, finely chopped
  • 1 tablespoon fresh dill
  • green onion
  • salt
  • pepper

How to make it:

Finely slice potatoes (I left the skin on) and place into a mixing bowl. Chop the onion, fresh dill, and corned beef and add to the potatoes. Pour in the heavy cream and stir. Add salt and pepper to taste. Pour the potato mixture into a pie crust and bake in a 350 degree oven for approximately 45 minutes or until potatoes are tender.  Garnish with diced green onion and additional dill if desired.
