Coconut Shrimp Fajitas + A Wine Pairing

This past week has been pretty rough for me. I might share a little bit more in the upcoming days. Before everything happened a week ago though, I shared a post about our three night trip to the Oregon coast with the kids. We relaxed in the little condo-styled room, walked on the beach, watched old funny movies, and cooked some meals together.

I’ve always enjoyed coming up with new twists on meals that are simple to throw together for the family for an easy meal in minutes. I’ve always loved fajitas, but normally make chicken or steak – last time though, I decided to try something a bit different: Coconut Shrimp Fajitas by using SeaPak’s® Jumbo Coconut Shrimp.

Making Coconut Shrimp Fajitas

What you need:

  • 1 box of SeaPak® Jumbo Coconut Shrimp
  • tortillas
  • 1 red pepper
  • 1 orange pepper
  • small onion
  • 1 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Whisk together the chili powder, cumin, paprika, garlic powder, salt, and black pepper in a small bowl. Set aside.

Cook the coconut shrimp according to the directions on the package. While the shrimp is cooking, slice the red and orange pepper and the onion. Place peppers, fajita seasoning, and oil into a fry pan on medium heat. Saute until tender.

Remove from heat. Slice the shrimp into strips and add into the fajita mixture. Spoon onto a tortilla and serve immediately. Pair with your favorite wine for an easy  and tasty dinner! I paired mine with Pinot Grigio from Black Box Wines.
