Garlic Chicken, Rice & Vegetables

I’m always on the hunt for ways to make mealtimes easier and I talk about it quite frequently on here. As much as I love to cook, it would be ridiculous to always make everything from scratch without a little help.

Last week I found Foster Farms Sauté Ready chicken in the frozen meat section and decided to make some garlic chicken, rice, and vegetables for dinner. I’m sure by now you know how much I love Foster Farms, and this product is no exception. The Sauté Ready chicken comes in three varieties: Fajita, Garlic Herb, and Asian Style. The chicken has already been marinated and pre-cut, so all you have to do is cook it (which takes about 10 minutes) and add it to the rest of your dish. The bag contains 7 servings and is re-sealable, so it can last multiple meals.

 

I decided to make a quick chicken and rice dish and add some sautéed vegetables, and it turned out delicious! If you have any leftovers, it’s also wonderful warmed up in a flour tortilla the next day. 🙂

 

 

Garlic Chicken, Rice and Vegetables

 

Makes 7 servings

What you need:

  • 1 package of Foster Farms Sauté Ready Garlic Herb Chicken
  • 2 cups of brown rice
  • 1 cup of mini sweet peppers, chopped
  • 3 cups of carrots, sliced (I used colorful carrots for extra fun)
  • 3 cups of zucchini, cubed
  • 1 Tablespoon of oil (I used avocado oil)
 
  1. Cook the rice according to the instructions (simmer 2 cups of rice with 4 cups of water, covered, for 25 minutes).

  2. Sauté the chicken per instructions.

  3. In a separate sauté pan, add the carrots, sweet peppers, and zucchini and cook over medium heat until tender. Add the Sauté Ready Check and stir.

  4. Spoon desired amount of brown rice into a bowl and top with chicken and vegetable mixture.

  5. Enjoy!
