Welcome! today I’m going to share our spring brunch menu with you!

This past Sunday we accomplished something we had yet to do this year – enjoy a brunch on the back deck.  Get ready for a photo overload here because we lucked out and had a gorgeous morning with lots fresh food and colorful flowers.

Meals on the back deck could possibly be one of my favorite things that occur during the warmer months – we break out the grill and use it nearly daily – even for brunch.

Another one of my favorite things about the spring and summertime is all of the fresh produce that begins showing up, with all of the naturally vibrant colors.

For our Sunday morning spring brunch menu I served:

  • Sweet Potato Hash
  • Fresh Mint Fruit Salad
  • Applewood Smoked Bacon and Ham
  • Cinnamon Raisin English Muffins
  • Eggs ‘n Rings
  • Sweet Potato Fries
  • Assortment of Fresh Fruit
  • Orange Juice and Coffee

Now, don’t ask me where I come up with these ideas, but this Sweet Potato Hash tasted so well and it was quick and easy to make because I used Alexia Spicy Sweet Potato Fries! I love using Alexia products because they are high quality and very versatile – they are great to use for snacks, dinner, and even brunch!

 Sweet Potato Hash

What you need:

1 Bag of Alexia Sweet Potato Fries (can also use sweet and
spicy)

1 zucchini

1 red pepper

1 orange pepper

¼ diced onion

Feta cheese

Olive oil

Salt & Pepper to taste

Begin with cutting Alexia Fries to the size you desire for your hash (or leave them whole!) – I used approximately ½ of the bag for my family. Dice the zucchini and peppers, then add everything except the feta cheese to a cast iron pan and fry over low/medium heat in olive oil until cooked thoroughly and slightly browned. Add the desired amount of feta cheese and serve straight from the pan! The feta gives a nice balance of tangy and sweet to this dish, and everything – even the sweet potato fries – are all natural!

Next I made a tasty fresh mint and fruit salad, which can be created with whatever kind of fruit you prefer, but I used:

  • 2 small Red Delicious Apples
  • 1 Bosch Pear
  • ½ cup diced strawberries
  • 1 cup blueberries
  • 1 cup red raspberries
  • Minced mint leaves
  • 1 TBSP fresh lime juice

It was delicious by itself; however it would be really tasty if you topped it with homemade whipped cream!

Now for the eggs…I knew I wanted to make something fun for the kids and I have seen eggs inside of onion rings before – but I wasn’t sure what would be the easiest way to create them. After a suggestion from my husband we found a way that worked well for us.

Start off with placing the Alexia Onion Rings on a cookie sheet and bake for 10 minutes. Remove the pan and crack each egg into the center of the onion rings and return to the oven for approximately 10 more minutes, or until the eggs are baked. By cooking the onion rings for 10 minutes first, it heated up the cookie sheet so that when you crack the eggs they will not spread too far and will remain contained inside of the onion ring! I then topped the eggs with sea salt and fresh cracked pepper and they were a big hit!

Spring time always makes me think of brunch – and I’m glad we finally had the opportunity to enjoy one!

Hi Rachel! No, I didn't have any problems with them sticking - if you do maybe just give it a good coat of cooking spray before you bake the onion rings. :)
