Black Bean, Mango, and Rice Salad

So after being back and forth with my eating habits over the past couple of weeks, this last Monday I put my foot down and told myself that I needed to start eating a little healthier – starting with a 5 day cleanse from any processed foods, sugar, coffee, and alcohol. Right now I’m on day 4 – making it to 5 days will most definitely be the longest I’ve ever done anything like this. Who knows – maybe I’ll keep going and make it a full 7 days!

While shopping at Fred Meyer a couple of days ago I purchased a Rubbermaid® Balance™ Meal Kit. I found them in a center aisle and liked the idea behind having a meal that’s quick, easy, and balanced – with no measuring required! It’s going to work perfectly this weekend for my lunch while I’m working. Each  Rubbermaid® Balance™ Meal Kit comes with four pre-portioned and color-coded containers for fruits, vegetables, proteins, and grains. All of the sizes were developed in partnership with a Registered Dietitian. Having each container separately makes it easy to warm up part of your meal if you’d like, and they are all placed into a carry box with a lid for convenient storage.

The  Rubbermaid® Balance™ Meal Kit also come with a recipe book containing 35 recipes to get you started with over a month of lunch ideas. I went ahead and tried it out yesterday – and made a black bean and rice salad with mangos, red peppers, onions, and corn. It was great not having to measure things! All I did was pour each amount into the appropriate container.

Black Bean, Mango, and Rice Salad

What you need:

  • Corn
  • Onion
  • Red Peppers
  • 1 Can of black beans
  • Rice
  • 1 mango
  • Salt
  • Pepper
  • Olive Oil

Drain the black beans in a colander and rinse. Set aside. Dice the red pepper, onions and place into a skillet along with the corn. Grill or broil until the pepper and onions are tender.

Cook a serving of rice (I used a quick medley rice) and then add it to the grain portion of the  Rubbermaid® Balance™ Meal Kit. Add the black beans to the protein, mango to the fruit, and the grilled vegetables to the vegetable portion.

Sprinkle the beans or rice with salt, pepper, and olive oil if desired. This can be eaten deconstructed style, or toss in a bowl just before eating and enjoy it warm or cold!
