Rosemary Cranberry Butternut Squash Side Dish Recipe

I’ve been saying it quite a bit lately, perhaps because it almost doesn’t seem possible, but the holiday season is upon us friends! December is just around the corner which will hopefully entail many dinners and celebrations. Are you in charge of a holiday meal this year? Do you want to make something slightly different? I know this is the time of year for many sweet treats, but I also like making sweet and savory side dishes.

Many people make yam or sweet potato side dishes, but have you thought about making a butternut squash side? It tastes just as good – if not better. I diced and baked a butternut squash, then added winter flavors to create this simple and savory side dish that is so easy to prepare, but tastes like it took a lot of hard work. 😉

Rosemary Cranberry Butternut Squash Side Dish

What you need:

1 butternut squash

1/2  cup of honey

1 cup of dried cranberries

1 cup of hazelnuts, chopped

2 teaspoons of fresh minced rosemary + more for decoration

Pre-heat the oven to 375 degrees. Peel and dice the butternut squash into 1 inch cubes. Place the butternut squash, cranberries, hazelnuts, honey, and rosemary into a large mixing bowl. Stir until thoroughly coated then transfer to a baking dish. Cover and bake for 1 hour.

Enjoy!

I dono't see why not! They would be quite a bit more tart so I would play around with adding a little more honey or perhaps even cooking the cranberries down a bit on thestove with some orange juice and sugar and then add them in to the dish?

Just wondering if any other herb could be used besides fresh rosemary--I have all of the rest of the ingredients--just no rosemary. Looks very good!

I usually am not a negative person, but this one certainly disappointed me. Squash comes in all sixes, so it was hard to know how big of a one to use............I used one that almost filled a 2 qt casserole .....The amount of cranberries and nuts (I used pecans, much better flavor), was probably ok. BUT, the honey amount made it way too sweet and the rosemary could have been cut to maybe 1/4 teaspoon......it totally took away from the squash and other flavors. Maybe there would be a better seasoning to replace it ??? Also, the color of the squash totally changed when mixed with the other ingredients, not making for the pretty dish you have in the picture. Sorry to not have good things to say about this.

Would this be something I can make and then keep in crockpot for warming purposes or do you think it would soften the squash too much?
