Easy Banana Bread Recipe

I’m slowly starting to get caught up on some of my holiday baking. I’m nowhere near where I’d like to be, but since I’ve come to the conclusion that I’m not going to be mailing a bunch of things out due to lack of time, and we aren’t having anyone over, I don’t need to bake too much because we all know who would be eating all of the goodies! None the less, it’s Christmas time and the kids always love to help me make stuff in the kitchen, so I’m always on the hunt for something that they would have fun baking with me – and last week I found this Banana Bread recipe.

Anika was busy and Wayne was at work, so Emma and Noah assisted me with the pouring and mixing of the Banana Bread. What makes this recipe so unique is the fact that it’s made with (in my opinion) an unlikely ingredient – KRAFT ORIGINAL MIRACLE WHIP dressing! We actually had some in our cupboard – we keep it on hand for BBQs and such, but we ourselves don’t usually eat it on hamburgers or sandwiches.  The kids thought it was so fun to put it inside of our Banana Bread, and my little foodies critiqued it when it came out of the oven.

“Mmm, it is very moist and crunchy with a nutty flavor.” Stated Emma; we may or may not be watching the Food channel a lot lately.

 

Wayne came home and of course, smelled the Banana Bread and began devouring it as well – and was very surprised when the kids told him about our “secret” ingredient! In fact, everyone in the house loved it… and now I’m going to have to make another loaf because there’s only one slice left –and Christmas is still four days away!

 
 

You should try this recipe and tell me what you think! I’ve copied it directly from the KRAFT website:

EASY BANANA BREAD

 

What you need:

1  egg

1/2 cup  MIRACLE WHIP Dressing

1-1/3 cups  mashed fully ripe bananas (about 3)

1-1/2 cups  flour

1 cup  sugar

1/2 cup  chopped PLANTERS Walnuts

1 tsp.  baking soda

1 tsp.  salt

 

Make it:

 

HEAT oven to 350ºF.

BEAT egg, dressing, and bananas in a large bowl with whisk until blended. Mix remaining ingredients. Add to banana mixture; stir just until moistened.

POUR into a 9×5-inch loaf pan sprayed with cooking spray.

BAKE 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan 10 min.; remove from pan to wire rack. Cool completely.

That looks awesome! I LOVE banana bread! You'd have to convince me on the Miracle Whip LOL! I see it is taking the place of the oil though. I always love hearing when you involve the kids in helping you in the kitchen. I remember YOU sure liked to bake when you were their age! LOL

Looks awesome! Banana bread is the best! I used to be scared of using mayo in cooking, idk why, but once I started I realized it's a great addition!
